Blueberry Cobbler

Preparation:  10 min. Cooking: 40 min. Total: 50 min.
  • 4 Cup blueberries
  • 2 Tbsp lemon juice
  • 2 Tbsp instant tapioca
  • 1/2 tsp salt (optional)
  • 1 1/4 Cup sugar
  • 3/4 Cup all purpose flour
  • 3/4 tsp baking powder
  • 1 eggs , beaten lightly
  • 2 Tbsp unsalted butter , melted

Preheat oven to 350 ℉. Combine first 4 ingredients and 1/2 whole cup sugar sugar in a 9 inch baking dish. Set aside 5 minutes. Combine remaining sugar, flour and baking powder in a food processor or bowl and mix thoroughly. Add beaten egg and process until mixture resembles coarse meal. Sprinkle flour mixture over blueberries. Drizzle with melted butter. Bake 40 minutes or until top is golden brown and mixture is bubbly.
